A Decade of Partnership, A Lifetime of Flavor
Blobby Brew Coffee Company was launched in 2026 from the shared passion of Lauren and Jackson D’Ettore. Happily married for over a decade, we launched this venture as a creative outlet to elevate the daily coffee ritual through deliciously curated specialty products. For us, coffee is more than just a morning necessity—it’s an experience that deserves the same artistry, precision, and joy as a fine dessert. We started this journey to bring a touch of that "Saturday on the Sand" feeling to every kitchen, one small batch at a time.
The Chef & The Strategist
The magic behind our flavor profiles comes from Lauren, our resident "Coffee Chef." With an extensive background in catering and food preparation, Lauren’s true passion has always been the delicate art of baking. Having had the privilege of designing wedding cakes and crafting intricate specialty desserts, she now applies that same culinary finesse to the world of specialty coffee. While Lauren handles the "art" behind the scenes, Jackson brings the "science" of operations. With a successful background in sales and product management, Jackson ensures that the day-to-day flow of the roastery is as smooth as our dark roast, keeping our focus on quality and customer experience.
Our Roadmap
We believe in the power of starting small and perfecting the craft. Currently, we are refining our signature offerings right here on Florida’s Gulf Coast, kicking off initial operations under the Florida cottage food laws to ensure every product meets our high standards for freshness and flair. While we love our local roots, our eyes are on the horizon. Our goal is to grow from this artisanal home-base into a premier commercial location, eventually bringing the Blobby Brew experience—and our mascot, Blobby the Blobfish—to coffee lovers nationwide.
